Baked Whole Trevally

Baked Whole Trevally – Gut and gill the fish, remove small scales and make even cuts on both sides. Coat in oil, salt, pepper, ginger, garlic, Wild Fennel Co. seasoning, red chili, and parsley. Squeeze over lemon and lime juice and top with slices. Add vegetables and bake the whole lot for 25mins at 190c/until the eye is opaque.
