

Ingredients:
- Beef roast (I used a 3-4lb rolled roast)
- Traeger rub (or any type of meat seasoning of your choosing)
- Beef stock
- Beer or coke
- BBQ sauce
- White onion
Asian crack sauce:
- Fish sauce
- Lime juice
- Brown sugar
- Coriander
- Shallot
- Garlic
- Chili
- Chives
- (Chop everything fine and mix all ingredients together, measure it all by taste)
Pulled beef method:
- Season meat liberally with Traeger rub and leave in the fridge overnight
- Set Traeger to 110°C and place the meat on the grill for about 3-4 hours (internal temp around 70°)-Increase grill temp to 130°C and place meat in a tray. Poor into tray about 2 cups beef stock, half a can beer or coke, a good dash of BBQ sauce and chopped onion
- Cover tray with tinfoil and leave in the Traeger for another 2 hours or so, until internal temp is around 95°
- Remove and rest
- Pull apart meat and reduce braising liquid over the stove if you want to add a little extra flavour/moisture to the meat
I assembled my toasted tacos with shredded lettuce, pulled meat, a good helping of crack sauce and a sprinkle of feta. To bloody die for!
