Fish crudo is a raw fish dish, similar to sashimi, where thinly sliced pieces of fresh fish are typically dressed with flavorful oils, citrus juices, herbs, and/or spices to enhance its natural flavors. This recipe is a twist on one by the Sydney Fish Market and made enough for a good single serving – adjust the recipe to suit the quantity you’d like to make
Ingredients:
- 150g Yellowtail Kingfish, or similar – remove skin and blood
- 1/2 of a ripe Plum
- 1 Red Radish
- 1 Long Green Chilli
- A handful of fresh Mint and Coriander
- Olive Oil – I used Village Press Lemon Infused
- Salt and Pepper
For the dressing:
- Juice of one Lemon
- A good swig of Olive Oil (about 3 tablespoons)
- 1/2 Tsp Honey
Method:
- Place your Kingfish in the freezer for 10minutes before preparing the dish
- Thinly slice your plum, radish, and green chilli
- Finely chop your mint and coriander and add to a bowl with your lemon juice, olive oil, salt and pepper, and honey – mix well
- Thinly slice your chilled kingfish and arrange on a plate
- Arrange your plum, radish and chilli slices around it
- Top with your dressing and some extra olive oil – enjoy!
