Makes one serving. Cut about 200g of kingfish into chunks and marinate for 30mins in:
- 1 tsp crushed ginger
- 2 tsp crushed garlic
- 1/2 tsp smoked paprika
- 2-3 tsp Moroccan spice mix (Masterfoods)
- a few good glugs of olive oil
In a frying pan, fry 2 x sliced shallots with 2 x sliced carrots, until soft. Add in the marinated kingfish and fry for a minute or two, then add two big handfuls of spinach and some crushed walnuts fry until spinach is wilted and fish is cooked (it doesn’t take long!).
I served mine on brown rice, topped with coriander and chilli flakes, with salad, and fried courgettes.
