Easy Smoked Fish Fritters

Simply mix the below ingredients in a bowl, fashion into cakes/fritters and fry.

  • 1 Can Corn Kernels, drained
  • Smoked Fish (I used kingfish)
  • 1 Whole Brocolli, incl. stalk, cut finely
  • 3 Eggs
  • 1/2 Cup GF Self Raising Flour
  • S+P
  • 1/2 Tsp Ground Cumin
  • Lemon Zest
  • 1 Tsp Chilli Flakes

Notes: I cooked these on a lower heat, for longer to allow the broccoli to soften through. This also made ALOT of mix. 3 was enough for one meal for me and still have enough mix in the fridge to make 4 or 5 more.When you first put the mix in the pan it doesn’t seem like it will hold together, it does. Just needs to cook for a bit to bind.I served topped with sweet chili sauce, a squeeze of lemon and chopped spinach/kale. I think sour cream and/or guacamole would be awesome with these too.Took about 20mins start to finish.
