Makes one serving. Cut about 200g of kingfish into chunks and marinate for 30mins in:<\/p>\n\n\n\n
In a frying pan, fry 2 x sliced shallots with 2 x sliced carrots, until soft. Add in the marinated kingfish and fry for a minute or two, then add two big handfuls of spinach and some crushed walnuts fry until spinach is wilted and fish is cooked (it doesn’t take long!).<\/p>\n\n\n\n
I served mine on brown rice, topped with coriander and chilli flakes, with salad, and fried courgettes.<\/p>\n\n\n\n
