Venison, Kumara and Quinoa Salad. Tis’ the seas

Venison, Kumara and Quinoa Salad.

Tis’ the season... here in New Zealand anyway! The following ingredients will be per serving so increase as needed. Just chuck everything in a big bowl and give it a mix before serving:

▶ 150g cooked/chilled venison sliced
▶ Handful of your favourite salad greens
▶ 1 x Courgette sliced thin
▶ A few black olives halved
▶ 1/3 Cucumber diced
▶ 1/2 Avocado cubed
▶ 1/2 Cup cooked/chilled kumara
▶ 1/2 Cup cooked/chilled quinoa
▶ Salt and pepper
▶ As much dressing as you want - I used 1.5 tbsp Olive Oil, the Juice of half a lemon, 1/2 tsp Dijon Mustard whisked together

Super simple and healthy venison burger patties. 500g venison mince, a broccoli finely chopped, a leek finely chopped, salt and pepper, two teaspoons of bone broth powder, a good few glugs of coconut aminos - shape into four decent patties and cook on a hot bbq or pan! Serve with veggies or in a burger 👌

Fish Curry - Coat half a head of cauliflower, in p

Fish Curry - Coat half a head of cauliflower, in pieces, in coconut oil + 1tsp of tumeric and 1tsp of ground Coriander Seeds. Roast in oven for 15mins on 200c.

In a frying pan brown a leek and an onion for 5mins. Add 4 cloves of garlic, minced, and some grated ginger. Then after about a minute add 5 x cardamom pods, a cinnamon stick, a pinch of chilli flakes, pepper, and a tsp of Garam Masala. Cook for a minute then add 1/4 cup fish stock and a can of coconut milk. Add a further Tsp of turmeric and a tsp of ground coriander. Stir and bring to a light boil.

Let simmer for 5 or 10 mins then add in the roasted cauliflower from the over along with a heap of baby spinach and cubed fish. Lastly, squeeze in the juice of a lemon and serve topped with fresh coriander and chilli.

Throw back to a lockdown favourite - Cheese and On

Throw back to a lockdown favourite - Cheese and Onion Beer Bread with Baked Smoked Fish Dip.

For the Beer Bread:

▶ 1 cup self-raising flour
▶ 1 tsp salt
▶ 2 tsp sugar
▶ 375 ml beer (I used @sawmillbrewing Pilsner)
▶ 1 cup tasty cheese, grated
▶ 1 thinly sliced red onion

For the Smoked Fish Dip:

▶ 250 g smoked fish
▶ 1/2 cup sour cream
▶ 1/2 cup mayonnaise
▶ 1/2 small red onion, finely chopped
▶ 1 salt & pepper to taste
▶ 1 lemon, zested
▶ 1 dash Tabasco sauce (or to your liking)
▶ 1/4 cup panko breadcrumbs
▶ 1/4 cup tasty cheese, grated (for topping)

For Serving:

▶ 2 tbsp parsley, chopped
▶ 1 spring onion, chopped
▶ 1 fresh chilli, chopped
▶ 2 tbsp olive oil

Instructions

Prepare the Bread Batter: In a bowl, combine the self-raising flour, salt, and sugar. Slowly pour in the beer, stirring until it forms a sticky batter. Fold in the grated cheese and sliced onion.

Bake the Bread: Preheat the oven to 180°C. Scrape the batter into a loaf pan and bake for 40 minutes or until golden and a skewer comes out clean.

Mix the Dip: In a bowl, combine the sour cream, mayonnaise, red onion, flaked smoked fish, lemon zest, Tabasco, and season with salt and pepper. Transfer to a baking dish.

Bake the Dip: Top the fish dip mix with panko breadcrumbs and grated cheese. Bake for 15 minutes at 180°C or until golden on top.

Serve: Slice and toast the beer bread in a griddle pan. Serve with the warm dip, garnished with parsley, spring onion, fresh chilli, and a drizzle of olive oil.

Note - I’ve made the beer bread with Lion Red too and it was great!
