"An 8-bone French trimmed fallow rack of 670g. Wil

"An 8-bone French trimmed fallow rack of 670g. Wild from the Cotswolds and taken under deer management and processed through Deerbox.co.uk. The rack was left out of the fridge for an hour to become room temperature before cooking. Seasoned with salt and pepper and then it to the oven at 100°C until the interval temperature hits 52°C - the point at which the proteins start setting and start becoming cooked, not raw. Then in a pan with loads of butter, garlic cloves and rosemary, sear the outside and baste with the butter until you have a nice brown crust on the outside. Rest for 7 minutes at least and then carve. Served on top of wet polenta with loads of cream, butter & parsley. Foraged wild garlic pesto on the top to finish it off. No raw middle, just perfectly cooked edge to edge."

"Barbecue elk ribs with spicy gochujang sauce. They were a bitch to cut from the plate with only a hand saw but definitely worth the extra work. Remember to boil/braise venison ribs before finishing in the smoker to pull out the tallow or you’re gonna have a bad time - This meat was from a cow elk hunt I do every year with my friends, all women, no boys allowed (except Cody Cole Outfitter 😁)"

"Our Fiordland hunt this year kinda sucked balls. But it has its moments that bring pure joy.

Leading up to this hunt, we were struggling with the blokes we had to share the block with because we both wanted to hunt the same area and neither of us would give an inch. It wasn’t a pleasant way to start a hunt.

Anyway, Josh and I hunted hard for 6 days and the other party did the same but we all retreated back to the same base camp to wait out the heavy rain before our flights out.

And this is where hunting/hunters are unmatched. Being in such a demanding place like Fiordland leaves you with no energy to spend on pointless arguing. So Josh, myself and the other party crowded around the smokey, wet fire place and got into a few beers. Before long, we were having the best time with these lads and the valley echoed with laughter. We all shared beers, Fireball, food and stories late into the nights. It honestly was the best part of our trip and I was so grateful to share a camp with these guys.

There’s probably a lesson to be learned here but I think it’s just a reminder that most hunters (Of any age, culture or background) are alike and we’re all here for a good time.

Bleed it well and chill it straight away and you may find another exquisite table fish 👍 Lightly broiled fillet "tataki" is my favorite way of appreciating the delicacy. "Absolute glass off of a day out there, open water swimming in clear warm blue water and a bunch snapper and trevally in the bin. Chilli-infused trevally sashimi plate, trevally soaked in chilli oil and soy for an hour prior sliced and garnished… Grilled snapper on the weber perfectly crispy skin. Not bad for camp side meals."
