Sumac Kingfish Wings. This is an Al Brown New Zealand Chef recipe, it’s easy and GOOD.
Take your wings and coat them in a mixture of olive oil, 1 tablespoon sumac, 1 tablespoon ground cumin, and 1 teaspoon chilli powder. (or more if you like a lot of heat), Lemon Zest, and S+P.
Bake on a preheated tray at 200c fan bake for around 15mins (depending on the size of the wing).
Serve topped with spring onions, olive oil, a squeeze of lemon juice and some more lemon zest.
The wings are one of my favorites parts of kingfish and this is an awesome combo of flavors.
