Simple fish laksa. Make your own laksa paste or go to countdown and buy this one (it’s awesome):
Cook paste as per directions then add in coconut milk and water as per directions.
I add in a courgette, shitake mushrooms, broccoli and kingfish (or other white fish). Simmer until cooked. I add the fish right at the end as it only takes a couple of minutes to cook through.
Add a dash of fish sauce and lemon juice then top with lemon wedges, chili, spring onion, and coriander. It’s also great with blanched bean sprouts on top which I didn’t use on this occasion.
You could add other veges, or less if desired. I serve it over cooked thin egg noodles.
