Paua and Crayfish Spaghetti

I didn’t really measure anything for this. You could use other ingredients in your fridge but here’s how I did it:

Get some spaghetti in a pot boiling. When that’s about halfway, chuck some halved asparagus in a hot pan. Once that starts to brown add in a spoonful of butter, a heap of garlic, and fresh chilli. Fry until it smells good.

Next, add in thinly sliced marinated Pāua. I boiled my Pāua for a minute, then took it out of the shell, removed the teeth and guys, finely sliced then marinated it in lemon juice, spring onions, and chilli flakes.

Then, put in crayfish meat, some halved cherry tomatoes, lemon zest and lemon juice. Fry this HOT for a minute or two then add a little bit of the pasta water.

Take it off the heat and mix through your cooked spaghetti.

Finish with more fresh chilli, spring onions, parsley, salt and pepper.
